Oven Baked Chicken Fajitas

We’ve officially hit summer in the our home. 3 weeks ago I envisioned my summer days being spent in the kitchen, spending hours dishing up elegant meals made with love and care. In reality, I’m having way too much fun soaking up the Southern California sunshine to bother with cooking dinner every night. But, the kids gotta eat (who knew?), even though it’s summer. I’d like to share with you one of my one-dish meals that take very little effort besides cutting veggies and chicken: Oven Baked Chicken Fajitas.

Fajitas are one of my favorite things to order at Mexican food restaurants. I love how they always come out steaming on a hot iron skillet like this one. But on busy evenings, you can still get that traditional fajita taste without all the hassle of grilling and sautéing.

Oven Baked Chicken Fajitas  

Ingredients
4 small chicken breasts
1 red bell pepper
1 green bell pepper
1 white onion
1 packet fajita seasoning such as McKormick
Tortillas
Optional toppings: Lime, cheese, sour cream, salsa, guacamole, beans
Directions
Preheat the oven to 375.
Thinly slice the veggies and spread them evenly on the bottom of a greased roasting pan. We use this Cuisinart pan  for everything, and it worked great in this recipe.

Sprinkle some fajita seasoning over the veggies, to taste.
Thinly slice the chicken and layer the pieces over the veggies. Sprinkle with more seasoning.  
Place the roasting pan in the oven and bake for 15 minutes, then mix the veggies and chicken up. Return the pan to the oven for another 10-15 minutes or until the chicken is cooked through (you can check if it’s cooked by making sure it reaches an internal temperature of 165 F).

To assemble the fajitas

Line the center of a tortilla with the fajita mixture and your choice of toppings. Squeeze lime over the filling, fold your tortilla up like a taco and enjoy!

Even though I love baking, on a beautiful summer day I’d much rather be enjoying some of our favorite staycation activities than sweating in the kitchen making dinner. Thankfully, this oven baked fajita recipe takes about 30-45 minutes from start to finish.

Black Bean and Chicken Burritos

It was 2 days after Christmas and I had never craved fruits and vegetables more in my life. I think I ate my weight in Christmas cookies this year! I totally got off track on my meal planning, due to so many holiday parties and family gatherings. The kids couldn’t even open their stockings until Mommy took the “Stand in Front of the Tree” pic. I love how in the second one John is trying to nab Johnny’s pacifier, haha! He’s determined to potty train the little guy AND break him of the paci over winter break. I’m excited for when we get him out of diapers!

The girls got tons of great gifts, all of which are their new favoritest thing ever. Oh, and Emily wore a party hat for most of the morning. Happy birthday, Jesus!

Black Bean and Chicken Burritos

Ingredients

  • 1 Tb. olive oil
  • 2 boneless chicken breasts, diced
  • 1 small red bell pepper, diced
  • 2 green onions, sliced
  • 1 tsp. cumin
  • 1 can black beans, rinsed and drained
  • 1 can whole tomatoes with juice
  • Flour tortillas
  • Avocado (optional)
  • Salsa (optional)

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Saute the chicken, bell pepper and green onions in oil until the chicken is cooked through.
  3. Stir in the cumin and cook for about 1 minute.
  4. Add the black beans and tomatoes. Using the back of a spoon or a spatula, break apart the tomatoes as you stir.
  5. Remove from the heat.
  6. Arrange about ¾ cup chicken mixture in the center of each tortilla and top with salsa and avocado. Roll the tortillas into burritos.
  7. Tip: Use a tortilla warmer to keep tortillas hot until ready to serve!

This dinner was pretty quick and easy to put together. My little guys liked it, but they’re not very good at eating burritos so I cut their tortillas into pieces and made them burrito “bowls”. 😉

Next week I’m going to use up the leftover turkey in some enchiladas. Yum!

December Weekly Dinner Menu: Week 1

This week we’re getting our Christmas tree over the weekend-YAY! That, combined with a “Breakfast with Santa” event and the town Christmas parade, made this weekend pretty busy for us. I’m hoping to have a night off of cooking near the end of the week so I can catch up on housekeeping. Hello, leftovers! 🙂  

Sunday: Easy Chicken Alfredo Pasta Bake and steamed broccoli. I’m a sucker for pasta in a cream sauce. We’re serving ours with broccoli but you can use whatever veggies you like.

Monday: Leftover Turkey Casserole. This looks like a great “comfort-food” recipe. Anyone else still have some turkey bits in the freezer from Thanksgiving?

Tuesday: Parmesan-Crusted Pork Chops, served with steamed green beans and instant rice pilaf.   A week of family dinner ideas for the first week december

Wednesday: Taco Bake served with green salad.

Thursday: Leftovers served with thin-sliced tomato and cucumber salad.

Friday: Crock Pot Bourbon Chicken served with rice and steamed zucchini. TGI Friday’s used to have this amazing selection of menu items cooked in a Jack Daniels glaze. I’m hoping that’s what we’ll get with this recipe but crock pots always take some of the flavor out so we’ll see…

Saturday: Baked Chicken with whole wheat dinner rolls and steamed veggies. I’m not sure what veggies we’ll have that will still be good at this point, but I’m thinking it will probably be broccoli. We get a big pack of bakery whole wheat rolls at the store and freeze them for when we don’t want to cook another side dish for dinner, so that’s what we’ll be using here. My aunt has a fantastic recipe for dinner rolls that she just whips up, no big deal. My goal is to one day do the same, but that will probably have to wait until I’m not working two jobs and John finishes school…

Family-Friendly Weekly Meal Plans

At the end of every week I take an hour or so and plan out our dinners for the following week. I try and get the weekly meal plans done by Friday night so we can do the shopping in one big trip on Saturday. I’m sharing some of the dinners we have on the menu each week so you can use them in your weekly meal planning. family-friendly weekly meal plans

Why use weekly meal plans?  

Most people don’t plan their dinners for the week because it’s a pretty time-consuming process. But I promise it pays off in the long run because you save money by not eating out. It also saves time during the week if you’ve already done the grocery shopping and don’t need to make a trip to the store before you can make dinner.

I’m sharing our dinner ideas in a series of family-friendly weekly meal plans. If you’re feeding a crowd like we are (we have 2 adults, a teenager, two preschoolers and a toddler with a tremendous appetite), you should be able to find something that works for your family in these recipes.

Hopefully by sharing with you what we’re eating this week, I can save you some time in hunting for good dinner ideas. 

When putting together your weekly meal plans, keep in mind your own family size and what they will and will not eat. If a recipe calls for green onions but your children don’t like them, then leave them out. Most (if not all) of our family dinners are mild because none of my kids can handle spicy food.

Did you know that October is National Apple Month? There are so many ripe apples just falling off of the trees in our town that I haven’t had to buy any. My coworkers are bringing them in to work and just giving them away! In honor of National Apple Month, here is my favorite fall recipe: Apple Cinnamon Coffee Cake. It’s got just a hint of cinnamon, plus a crunchy brown sugar topping. And the best part? It’s so easy to make!  As a busy mom, I sped the process up quite a bit by using applesauce instead of fresh apples. Enjoy!

In a separate bowl, sift together the dry ingredients. Then mix the wet in with the dry and you’re ready to pour it into the baking dish. I told you it was easy!

Using a clean bowl, make the crumble topping by mixing together butter, brown sugar and cinnamon. Sprinkle it all over the cake and you’re ready to bake. Ingredients:

2 cups flour
¼ cup unsalted butter, softened
½ cup sugar
2 eggs
1 cup sour cream
1 tsp. vanilla
1 cup applesauce
1 tsp. ground cinnamon
1 tsp. baking soda
½ tsp. salt

For Crumbled Topping:
½ cup light brown sugar
½ cup flour
½ tsp. cinnamon
4 Tbsp. unsalted butter, softened

Directions:

Preheat the oven to 350 and grease a 9×13 baking dish. Cream together ¼ unsalted butter and ½ cup sugar. Beat in eggs. Stir in sour cream, then vanilla, then applesauce. In a separate bowl, sift together 2 cups flour, 1 tsp. cinnamon, baking soda, and salt. Add to wet ingredients. Pour into the prepared baking dish.

For the crumbled topping, mix all ingredients together until crumbly. Sprinkle over the cake.

Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Easy After-School Snack Ideas and Printable Snack Menu

Homemade fruit popsicles are a cool snack for hot kiddos after school.

Fruit, vegetables, and dairy products make for easy, healthy snack options. Try to avoid sugary drinks as these can lead to cavities and overweight. Milk or water are best for children’s growing bodies.

A few tips for encouraging healthy after-school snack habits:

  • If your child goes straight for junk food snacks like chips and fruit gummies then consider not having those in the house at all.
  • When you go shopping, let your children pick the fruits and vegetables they want to eat.
  • Make sure you offer choices. Ask your child if he would prefer celery sticks or apple slices, instead of just putting out the celery sticks.

Alternative options for children with nut allergies or food sensitivity:

  • If your child has a nut allergy, you can substitute hard boiled eggs, edamame, string cheese, beef jerky, or greek yogurt for the nuts.

We aren’t going to be able to take a camping trip this summer. The little guys just require so much extra help and attention. Italian with a Twist | Gnocchi and Sausage is Tasty and Easy to Make!

I am a huge fan of Italian dinners. Anything I can that involves tomatoes and pasta is a win in my book. If it were up to me, we’d be eating Italian dinners every night in our house. This recipe uses gnocchi and sausage, with brightly-colored veggies thrown into the mix, to create a belly-filling dinner that is big on flavor and small on cook time.   One of my family's favorite easy Italian recipes that you can make for dinner tonight! This recipe combines classic gnocchi, sausage, and vegetables in a simple meal. A quick sprinkling of parmesan cheese gives it a taste of Italy! You could easily swap out the meat for chicken or meatballs, or leave it out entirely for a nice vegetarian dish.

1 package (about 1 lb.) Gnocchi Italiani
2 tablespoons butter
1 package (about 12 oz.) Sweet Italian Sausage, sliced crosswise
2 medium zucchini, thinly sliced crosswise
2 cloves garlic
1 package (about 2 cups) of grape or cherry tomatoes

Set a large pot of water to boil and cook gnocchi according to package directions (about 2-3 minutes at a rolling boil). Meanwhile, melt the butter in a large pan. Sauté the sausage in butter until it begins to brown on both sides. Add the sliced zucchini and garlic and cook, stirring frequently, for another 3 minutes or so.
Stir in the tomatoes and let them cook for a few minutes to heat through. It’s ok if they split open, this adds flavor to the dish. I used a package of “mixed medley cherry tomatoes” because it had a beautiful variety of color!
Add the cooked gnocchi to the pan and mix everything together well. Top with shredded parmesan cheese and step back to admire your pretty gnocchi and sausage dinner!

If you have small children, they may not love the gnocchi because its texture is a bit surprising. I think kids are expecting something sturdy because they look like little potatoes, but cooked gnocchi is really kind of squishy. I remember my oldest turning his nose up at it when he was little. At 13, however, he loved it and asked for seconds. The 3-year-old twins, who have to be eased into trying all new foods, were apprehensive and only ate what I told them to (“Ok, fine. Eat 2 pastas and then you can be done.”). The baby, who eats anything not nailed down, loved his gnocchi and sausage. So, in our house the gnocchi and sausage dinner went over about as well as anything else does: The boys loved it and the girls weren’t impressed. But what else is new? 😉

Homemade Fruit Popsicles

The weather’s really warming up around here, and summer is just around the corner. During the summer I’m always looking for ways to cool off without running the air conditioner or loading up on calories. So far, 2 out of the last 4 summers I was pregnant and eating way too much ice cream. This summer I’m working on getting back to my old ‘thin’ self, so the ice cream has got to go. As a healthier alternative to some dessert popsicles, I started experimenting with my own version of homemade fruit popsicles.

These are super easy to make and, after the initial investment of the molds to freeze them in, they cost little more than a bag of fresh or frozen fruit and some yogurt.

Another motive behind homemade fruit popsicles is these 3 cuties.   

They are pretty good eaters but there are still a handful of fruits and vegetables that they’ll turn up their noses at. Strawberries, oranges, bananas, grapes, pears, apples and peaches are on the “yes” list. However, mangoes and all other berries are an emphatic “no”. This drives me nuts too, because who doesn’t like blueberries? Sheesh. In the end, the homemade fruit popsicle idea was partly to introduce healthier summer treats and also to sneak a greater variety of fruit into my kids’ diets.

You’ll need some freezer pop molds. I tried some cheap-o ones I got at the local market but ended up liking these BPA-free ones better.   

I also found these itty bitty popsicle molds for the twins and Baby John at Buy Buy Baby. Both are also available on Amazon.

Ingredients for Homemade Fruit Popsicles:

1 cup frozen fruit, thawed and drained of juices

¾ cup fruit juice (I use apple because it’s what we always have on hand)

1 small (6 oz.) container Greek yogurt-plain is the healthier option but we sometimes use vanilla flavored and omit adding honey

2 Tbsp. honey

One of my favorite healthy kids recipes for easy homemade fruit popsicles. Fun ice pops can be low sugar by using greek yogurt, fresh fruit and honey. These are great summer treats that are also a healthy snack!

Place all the ingredients into a blender and hit puree. Pour the fruity juice mixture into popsicle molds, or just use a paper cup with a wooden popsicle stick in it! Put the pops into the freezer until they are solid, about 2-3 hours.

Because I used half of each recipe for one batch of homemade fruit popsicles, I had some leftovers. Bonus: this recipe also makes for a tasty fruit smoothie!

There are endless variations you could take with this recipe. Just imagine all the possibilities! Because we’re using real fruit, the popsicles can be a bit chunky. Yogurt helps to create a smoother, creamier texture but you may still find tiny bits of real fruit in homemade fruit popsicles. I think the real-fruit taste is what makes them so delicious!     

We experimented with mixed fruit popsicles and strawberry popsicles. The baby loved his itty bitty pop. The girls also wanted one of his because, siblings. I think I’ve even persuaded the teen to trade in the sugary sweet processed fruit popsicles for one of mom’s homemade fruit popsicles, but we’ll see…  😉

One of my favorite healthy kids recipes for easy homemade fruit popsicles. Fun ice pops can be low sugar by using greek yogurt, fresh fruit and honey. These are great summer treats that are also a healthy snack!

Chewy Chocolate Chip Cookies

Chewy chocolate chip cookies … Where fudge meets brownie meets cookie. 

Aside from the serious muscle required for stirring the dough, this is an amazingly simple cookie recipe. My mom used to make these all the time when I was growing up, and she learned the recipe from my grandfather. He was known for his decadent kitchen creations, and these cookies were always a family favorite!

Ingredients for chewy chocolate chip cookies:

1 box fudge brownie mix (the kind that calls for eggs, oil, and water)
2 eggs
? cup oil
1 cup chopped walnuts
1 cup white, milk, or dark chocolate chips
Preheat the oven to 350°. Empty brownie mix into a medium mixing bowl. easy chewy chocolate chip cookies recipe

You can buy fudge brownie mix that already has chocolate chips in it, but I preferred to buy the kind without so I make sure I’m getting a full cup worth of chocolate chips in my cookies! 
Make a little well in the brownie mix to hold the eggs and oil.

Add the chocolate chips and chopped walnuts. Mix everything together.

The dough will be very stiff! I had to bring in the big guns (my strong and hunky husband) to help me stir.

Drop about 2 tablespoons of dough onto a cookie sheet to form each cookie.

Bake in the preheated oven for 11 to 13 minutes. 

Move the cookies to a wire rack and allow them to cool.

These chewy chocolate chip cookies are milk’s perfect companion. The way I see it, the nuts count for protein and the dough counts for a carb. I wolfed down three this morning and called it breakfast. 😉
