If you are a family on a budget, eggs make a great dinner option. They’re inexpensive, low-fat, and packed full of protein. Thankfully, all my kids eat eggs (although some require them to be smothered in catch up but hey, I’ll take what I can get!).
I came up with this simple frittata recipe using what I had on hand at home. You can put almost any veggies into a frittata. Just make sure you steam or sautée them first. Raw veggies will not get soft while cooking with the eggs (I’ve learned from experience;).
Ingredients:
2 cups chopped fresh spinach
1 tablespoon water
2 tablespoons olive oil
8 large eggs
1 teaspoon dried thyme
Salt and pepper to taste
1/4 cup grated Parmesan cheese
1 Roma tomato, halved and sliced lengthwise
Directions:
Place the spinach and 1 tablespoon water in a microwave-safe dish. Cover with plastic wrap and microwave until tender, 1 to 2 minutes.
In a medium bowl, mix together the eggs, cooked spinach, thyme, salt, pepper, and Parmesan cheese.
Preheat the broiler.
Heat the oil in a large oven-safe skillet over medium heat on the stove. Add the egg mixture and let it cook without stirring it for 5 to 7 minute or until the eggs begin to firm up.
Top the egg mixture with the sliced tomatoes and place about 6 inches from the boiler. Cook for 3 to 5 minutes or until the frittata is starting to turn golden and pull from the side of the skillet.
The whole thing takes me less than 20 minutes. I serve it all up with some fresh fruit and toast. It’s kind of like breakfast for dinner, but it works great for a fast easy dinner solution on a busy night!
