Looking for a cheap dinner recipe? Lazy man’s stuffed cabbage is a great combination of low-cost and easy to prepare ingredients.
But first, let me tell you the story of how I came across Lazy Man’s Stuffed Cabbage.
As you probably know, I am a teacher. Lately we’ve been struggling to stay under budget, and one of the best people to give advice on low-budget meals is the SAH-wife of my school’s custodian.
During one of our after-school chats as he made his rounds through the classrooms, I asked Mr. Henry (not the custodian’s real name, of course) if he knew what I could do with about 5 pounds of shredded cabbage that we’d been given. He said his wife often used cabbage in a dish she called “Lazy Man’s Stuffed Cabbage”.
I was so excited to have found a way to use up the cabbage that had been sitting in my fridge! I insisted he call her and get the recipe. He obliged (because Mr. Henry is a nice guy ), and his wife gave me the gist of how she puts together her Lazy Man’s Stuffed Cabbage. It’s more like a casserole, actually. And it is very easy to prepare!
Ingredients:
2 Tbsp. olive oil
2 cloves garlic, minced
1 small onion, diced
1 lb. ground beef
1 Tbsp. dried parsley
1 Tbsp. lemon juice
1 cup uncooked rice
1 cup low-sodium chicken broth
1 cup tomato sauce
1 (14-oz.) can diced tomatoes
1 head of cabbage, shredded (about 4 cups)
Preheat the oven to 350.
Heat the oil in a large pan. Cook the ground beef until browned, then drain and return to pan. Add onion and garlic and sauté with the beef for 2-3 minutes. Stir in parsley, tomatoes, tomato sauce, lemon juice, broth, rice. Salt and pepper to taste.
Grease a 9”x13” casserole dish. Spread half the meat mixture in the casserole dish ad top with half of the cabbage. Add another layer of the rest of the meat mixture and top with the remaining shredded cabbage. Cover with foil and bake for 1 hour. Uncover and bake an additional 15-20 minutes or until most of the liquid is absorbed.
