Outside the Bowl: My Choice for #GivingTuesday

It’s the season for giving.  But before we get caught up in all the cyber deals and door busters, let’s take a moment to think about those who are less fortunate than us.

Did you know that every five seconds a child dies of hunger related causes? This is definitely something I need to be reminded of when I’m feeling dissatisfied with the way my life is going. Even though compared to America’s standards my family is not rich, in many countries we have luxuries that only the wealthy can afford. Things like running water, insulated walls, a car… When my children want grapes I can just reach into the refrigerator and there are most likely grapes in there. If we have run out of grapes, I can hop in the car and drive the half mile to the store and buy more grapes. Meanwhile many children in South Africa, Haiti, and Mexico are starving.

“In response to Jesus’ command to feed the hungry, Outside the Bowl is dedicated to eliminating physical and spiritual starvation in impoverished communities by building super kitchens, and working with established community partners to serve hot, nutritious meals to those who need them most.”             –Outside the Bowl

What makes Outside the Bowl so unique is the way it is set up. The kitchens partner with local organizations to distribute food to impoverished communities. The food coming from the kitchen is cooked using locally farmed ingredients. Local residents are hired to cook and serve the food. One “Super Kitchen” can serve up to 6,000 hot meals a day. The impact is incredible.

I really don’t feel like I do Outside the Bowl enough justice with my words, so please watch this brief video that explains in more detail what it is that they do.

Today I read a story with my class, Dragonfly’s Tale. It’s a story of how a group of people wanted to show off their prosperity after the harvest. The elders hosted a grand food fight and invite people from neighboring villages to come see how there was such an abundance of food that the townspeople threw batter like snowballs and trampled cakes into the mud for fun. Of course, the neighbors were disgusted. The rest of the story plays out the consequence for the townspeople’s lack of gratitude.

Where do we stand when it comes to our blessings? In the story of the townspeople, the wealthy were exaggeratedly arrogant. But still the message resonates with us because we recognize the error in not being appreciative of what you have.

I know times are tough for all of us. It costs less than 25¢ to feed a child a hot meal through Outside the Bowl. The Tuesday after Cyber Monday is becoming more widely recognized as Giving Tuesday. I challenge you to pay it forward this#GivingTuesday. If not through Outside the Bowl, then through another charitable organization that makes a positive impact on the world.

This post was not sponsored by Outside the Bowl. I have not been compensated in any way for my opinions. I’m merely spreading the word about an organizations that is changing lives in hopes that you may join me and donate today.

Today We Are Three

Three years ago today, we became parents of twins.

I remember that first 24 hours in the hospital and how much pressure we felt to do everything right. Our eyes constantly on the clock, we tried so hard to make sure that they ate for the correct number of minutes and at the correct interval of hours. We changed diapers and scrubbed little bodies with such care.   We took our two princesses home and our lives instantly went from organized and predictable to clutter and chaos.

But among the piles of laundry, toys, and sippy cups, wonderful memories were made.

We looked on with adoration as our growing babies found new adventures everywhere.

We’ve seen plenty of struggles and encountered countless frustrations, but none of those matter when your house is filled with the sounds of toddler giggles.
Twins share a special bond that is unlike any other pair of siblings. As they grow, so does their devotion to one another.    You can never be fully prepared for having twins. The birth of multiples will throw your life into turmoil, but you will find that you wouldn’t trade it for anything.

Although these last 3 years have been the hardest of my life, every minute was worth it because when I look into the eyes of my daughters, I see my blessings outnumber my trials.

The girls got to spend an evening at their grandparents house while their brother had a zillion rowdy boys over for a slumber party last weekend. They had such a great time snuggling up under their fuzzy Frozen blankies with Papa.

Why You Need to Check Out Kinsights

Let me start by saying that if you have ever Googled the answer to a parenting question or used Yahoo answers, you need to discover Kinsights.  kinsights

What is it, you ask?

Kinsights is sort of an online question-and-answer lounge for parents. Once you sign up (and signing up is free for U.S. parents!), you can browse questions posted by other parents or submit your own. Members who are in a situation similar to yours will be able to offer their advice in response to your posted question. Question askers choose the best answer, but other members can vote for their favorite answers as well.

Similar to other parenting networks, you can join groups based on your family’s composition (parenting multiples, food allergies, parents of adopted children, etc.). Best of all it’s a private, secure community. So unlike other parenting community forums, the whole wide internet world doesn’t have to know about your 6-year-old’s incontinence or your newborn that screams on every car trip.

Finally, just for fun, by participating in the community you can earn points which can advance you through levels. Each level you achieve as a Kinsights member opens up a new set of perks, like discounts on products that parents would actually use.

So go ahead, use this link to check out Kinsights. You can find me in the group Double the Fun: Parents of Twins, or you can join one of the other great groups of parents.

Disclaimer: All views and opinions expressed are my own. I was not compensated in any way by Kinsights to write this post. I truly think it’s a great community for parents.

Launching into the New (School) Year

Today I officially returned to school. What? It’s barely the first of August, you say? Yes, our school district let out in MAY so we are all back at work now and kids return to class on the 11th. Until then my calendar is packed with staff “retreats” (apparently a cute name for staff development days, I looked for the poolside lounge chairs but there were none in sight!), “Welcome Back Breakfasts”, and Common Core Math trainings. Although I’m not thrilled to be back to the early morning wake-ups and early start times, I am actually really excited to get back to school.

I can’t wait to greet my new students!

I have a few DIY classroom décor projects that I’m eager to get finished before the big first day… I just need to get started on them…

My classroom still has 5 boxes I haven’t unpacked. I don’t have a file cabinet, but the custodian is looking for one for me. My walls are bare and yet to be covered in bright-colored paper. The desks are pushed against one wall, waiting to be organized into groups with rainbow-patterned name tags at each seat. I have a stack of postcards with my students’ addresses on them that are in need of sweet “I can’t wait to meet you” notes (English and Spanish, of course) before mailing. I’ll be completing a zillion prep projects over the next 9 days (weekend included) after a full day of training or sitting in on staff meetings. Just thinking about all that needs to be done makes me hyperventilate just a little bit.

But it’s all going to be ok. I know it is. I always pull it off in the nick of time, and I can be grateful that this year I actually have plenty of time. Last year I was hired the day before school started, and had to set my room up and move in with two almost-one-year-olds crawling all over my butcher paper and making my room smell like dirty diapers.

I just need to breathe…

Wish me luck!

The Fun Stuff About Having Twin Toddlers

But don’t discourage- having twin toddlers can be so much fun! twins in pigtails

My two little ones are learning how to “help” put things away. twin helping

They mimic behaviors they see in Mommy and Daddy. twins at work

They like to be dressed in new things. twin dressed up

They like to play together finally! Ever since I had twins, people have been saying, “It must be so easy. They can just entertain each other! Um, not so much. As infants they just rolled around on the floor or crawled around in the same room, and they rarely noticed the other twin even existed (except for this fun moment which I was lucky enough to record). But now that they are over 1 ½ years old, they follow each other around and find it fun to do the same activity together. One of their recent favorite activities is to sit in the small space between our entertainment center and the couch and read books in their own little nook. While it’s not what I would call “easy” yet, things are definitely getting more fun now that we have twin toddlers. twins in nook reading

I love stories of cute things twins do together. If you have a cute twin story you’d like to share, I’d love to read it! Please share in the comments section.

Teriyaki Chicken Dinner

This is a great, easy teriyaki chicken dinner that is good and good for you! I usually prefer to serve brown rice, but white rice is my go-to carb for quick dinners. This meal will be on the table in 30 minutes!

Ingredients:

4 boneless, skinless chicken breasts
½ cup low-sodium soy sauce
1 Tbsp. toasted sesame seeds
2 tsp. sesame seed oil
2 Tbsp. brown sugar
1 tsp. crushed ginger
Long grain white rice
Fresh broccoli crowns

Place the soy sauce, sesame seeds, sesame seed oil, ginger, and brown sugar in a ziplock bag and mix well. Add the chicken, seal the bag, and put it in the fridge to marinate until you’re ready for it. teriyaki chicken recipe

Meanwhile, cook the rice according to package directions and chop and trim the broccoli. Cover a baking pan with aluminum foil. IMG_2444 Place the chicken on the aluminum foil and, while the rice is cooking, place the chicken in the oven under the broiler. Broil for about 10 minutes (depending on thickness of the breasts), turning it over after 5 minutes. During the chicken cooking time, steam the broccoli using a sauce pan with a steamer basket insert. steamed broccoli The chicken is done when it is 165° when tested with a meat thermometer.

I Lost the Motivation

Ever have one of those days when you just can’t seem to get the ball rolling? That was me, pretty much all day on Saturday. The house was clean, babies were napping, Big Boy and hubby were gone. Everything was in perfect alignment for me to sit down and work on next week’s lesson plans, without feeling guilty for not doing some other family responsibility. See my tidy workspace (those books are my planning stuff-all ready and waiting for me!)? tidy workspace

Usually a neat, quiet work environment is all the motivation I need to get started on a project.

Here’s what actually ended up happening:

I went on an infographic-making detour. I just love infographics, and I made this one from a free site called tagxedo.com. It twists your text into a customizeable word cloud. Isn’t that cool?

I window-shopped on Etsy (can you call it window shopping if you aren’t looking through windows?).

I recorded, then deleted a vlog.

I googled Macgyver inventions. Not sure why, but I needed to know what he invented. By the way, for an interesting compilation of 11 absurd inventions, check out this post.

I wrote this blog post.

I sat on the floor (once the babies woke up) and shared a quesadilla.

And that was Saturday.

Could I BE any more lazy?

My New Fave Word Art Site

I just discovered this free site that turns your text into word art! It’s so neat! My little geek brain is whirring with the many uses it could provide in the classroom. Check out the image I made!  A mother holds her children's hands for a short while, but she holds their hearts forever

My Favorite Age

A friend of mine recently posted a video on Facebook of her four-year-old daughter. The mom’s caption on this video was “This is my favorite age!”. It was a cute, short little video of this four-year-old just talking and being adorable (as four-year-olds are!).

Seeing that video made me really reflect on my experience as a mom. I remember back when my big boy was about 1 1/2 years old, at the time I thought that his age was the greatest age. I was so thrilled with the growth he had made and the neat things he was able to do. Then, when he was about three and more independent and potty trained, I thought that was the best age. Not only was he more independent, but he could talk and his little personality was starting to really show. Big Boy as a toddler As the years went on, I began to see the joy and adventure that each new year brings to both being a parent and being a growing child. Now he’s 10. He’s funny, he’s smart, and he’s fun to have around. We can actually do things together that I enjoy doing-like going to the movies or going for a jog or playing board games. my favorite age

It’s been so cool to see the twins grow, learn, and explore life together. They don’t always play together, which I know is normal because they’re just a year old. But when they do play together, it so fun to watch. And another areas, they’re very unique and individual. For example, they both wave hello and goodbye differently: One squeezes her hand open and closed, and the other does big circular waves. my favorite age

For me, each new day of being a mom is better than the last. These three little lives that I am responsible for are a huge blessing, and I am so thankful for each and everyone of them. With the teenage years looming overhead in our very near future, I am grateful for the beautiful kids that I have and hope that I can always remember how much they mean to me when times get hard! children are a blessing psalms 127:3-4

I’d love to hear your thoughts on being a parent, and if you have a favorite age of your little one’s childhood.
