One-Pan Kielbasa and Rice

I love any dinner recipe that doesn’t result in me washing a ton of dishes after the meal. Enter my all-time favorite cooking style: throw it all in one pot! Using instant rice helps this one-pan kielbasa dinner come together quickly. The recipe also combines cheap ingredients to meet all the food groups for a well-rounded meal. But just for good measure, it couldn’t hurt to pair it with some slices of melon or a nice cucumber salad 😉

This recipe is right up my alley since I usually end up mixing up all my meal parts into one big mush anyway. Which is really odd because, as a child, I loathed having my food “touch”. If even the teensiest bit of salad dressing touched my rice in the slightest, I refused to eat it. Funny how your tastebuds change, isn’t it?

One-Pan Kielbasa and Rice Ingredients:

2 Tbsp. olive oil

1 small diced onion

1 pound kielbasa or smoked sausage, halved and then sliced lengthwise

1 can cream of mushroom soup

1 cup water

1 cup uncooked instant rice

1 (10-oz.) bag of frozen peas

1 (8-oz.) package fresh sliced mushrooms

1 cup cheddar cheese

Heat the olive oil and onions in a skillet or large fry pan. Saute the onions in oil for 5-7 minutes or until they are tender.

Stir in the kielbasa, soup, and water and heat through (about 5 minutes).

Add the instant rice, peas, and mushrooms and bring to a boil. Reduce the heat to low, cover, and simmer for 10-15 minutes or until rice is tender and peas are hot.

Top with cheese and serve immediately.

one-pan kielbasa and rice Hopefully this will be as big a hit in your home as it is in ours. The oldest, who eats anything, is a fan of my one-pan kielbasa and rice. The twins are a wee bit pickier so I let them push aside the mushrooms. Oh, and we do refer to peas as “green balls”. I’m not sure if that increases the motivation to eat peas, but hey it works! 🙂
