I came up with this recipe one night when I was really craving my favorite Chinese take-out but we didn’t have the money for restaurant-quality Asian meals. I love House of Tsang peanut sauce because it’s got a real spicy kick to it. It’s also great on salads! To mellow it out for my kids I mix it with a little mayo and spread only a little bit on their wrap.
Ingredients:
4 10-inch flour tortillas
Bottled Asian-flavored peanut sauce
2 cups frozen, pre-cooked sliced chicken breast strips
4 leaves Romaine lettuce, sliced
½ cup cooked black beans (or use a can of black beans and save the leftovers for another meal)
1 carrot, peeled and sliced julienne
¼ red cabbage, sliced thin
To make each chicken wrap, spread peanut sauce down the center of the tortilla. Layer with ¼ of the lettuce, carrots, and cabbage. Then place a few chicken breast strips on top, sprinkle some beans over that. Roll it all up like a burrito and enjoy!
